  1. לא להתקמצן על תיבול - המנה אוהבת טעמים חזקים, אם אלה אבקת בצל, פפריקה מעושנת, אבקת שום או כל תבלין שאתם אוהבים.
  2. את התבלינים כדאי להכניס לבשמל - קודם ממיסים את החמאה, אז מוסיפים חצי מהתבלינים, אחרי זה קמח ונוזל ולבסוף את החצי השני של התבלינים.

@thechefmine I definitely prefer this to traditional mac & cheese Ingredients: Tomatoes base: 4 tbs/56g butter 1 small onion, diced 4 garlic cloves, minced 2 tsp dried oregano 2 tsp dried basil 2 tsp dried rosemary 3 tsp chilli flakes (or to taste) ½ cup/122g tomato paste 1 tsp salt 1 tsp black pepper 1 tbs sugar Cheese sauce: 60g/2oz butter 60g/2oz all purpose flour 2 cups/450ml heavy cream ½ cup pasta water 2 tsp paprika 2 tsp garlic powder 2 tsp onion powder 2 tsp salt 1 tsp black pepper 130g/4.5oz each of mild and mature cheddar and gruyere (or your cheeses of choice) 250g/8.8oz macaroni Steps: Tomato base: 1. Melt butter in a pan and cook onions until softened. 2. Add garlic and cook for 1 minute then add oregano, basil, rosemary and chilli flakes. 3. Add tomato paste and cook for 5 minutes on medium heat then add salt, pepper and sugar before removing from heat. Cheese sauce & assembly: 1. Boil your pasta in salted water until al dente (about 9 minutes) and save ½ cup of the pasta water. 2. In a deep pan melt butter over medium heat then add flour and cook until browned, stirring constantly. 3. Pour half the heavy cream and mix until combined then add the rest and mix. 4. Add the pasta water and mix. 5. Add paprika, garlic powder, onion powder, salt and pepper. 6. Add the tomato base and mix. 7. Add the freshly grated cheese, leaving some for layering. 8. Adjust the seasoning, then add the pasta. 9. Add the pasta to an oven-safe dish, add a layer of cheese, and repeat this twice. 10. Place the dish in a 180°C/356°F oven on the broiler setting and let the cheese melt and brown, about 10 minutes. 11. Drain the pasta and set aside. - In a large saucepan, melt the butter over medium heat. - Once melted, add half of the seasoning mixture. Add onions into a pan with butter & a pinch of salt, then cook over a medium heat for 30-40 mins until dark, golden & caramelised. 2.
